Sev tamatar ki sabzi is a typical Gujrati dish but we Indori’s also love it a lot. In Indore and other parts of M.P. this thick spicy gravy is very popular ,it is a spicy gravy made with tomatoes, onions, spices and sev as the main ingredient ,it is served on all road side Dhaba’s, restaurants and also in marriage receptions and parties. It is very delicious and easy to make ,tastes best with chapati, paratha ,naan and rice.

So lets start..to make this recipe what we need
Ingredients-
Sev- 1 small cup (You can take any kind of sev but it tastes best with plain and masala sev)
Onion-2 medium size finely chopped
Garlic-5 to 6 cloves finely chopped
Ginger-1/2 tbsp paste
Tomatoes-2 big size finely chopped
Green chillies or whole red chillies – 2 chopped
Asafoetida-1/4 tbsp
Mustard seeds-1/2 tbsp
Cumin seeds-1/2 tbsp
Coriander powder- 1 tbsp
Chilli powder-1/2 tbsp
Turmeric powder-1/4 tbsp
Garam masala- ½ tbsp.
Coriander leaves-1/2 cup for garnishing
Salt – according to taste
Oil- 2 tbsp for cooking
Method –
1 put on the gas stove and heat oil in kadhai /wok . Add mustard seeds, cumin seeds and asafoetida ,wait for the seeds to crackle.
2 Add chopped onions, garlic and sauté for a minute than add green chillies and ginger and cook on low flame till it changes its color.
3. once it done add coriander powder ,chili powder, turmeric powder and mix them well .
4. Add chopped tomatoes in masala and a pinch of salt , cook it on low flame till the oil separates from tomatoes.
5. when the tomatoes completely mashed up in spices add little water ,you can add water according to your choice but this gravy tastes yummy when it is thick.
6. let the water boil for 2 minutes than add sev, cook it for 30 seconds and put off the flame. garnish with chopped coriander leaves and sev tamatar ki sabzi is ready to serve.
Important note-
1 Make the gravy thick as it tastes best.
2 After adding sev don’t cook it much .
3 Add sev before serving dish, if You are waiting for guests keep the gravy ready and add sev when the table is ready. just heat up the gravy on flame and add sev.
